First, preheat the oven to 450 degrees Fahrenheit and whisk the flours, baking power and soda, sugar and salt in a large bowl. Then, cut in the butter until the mixture becomes coarse. Add the buttermilk to the dry ingredients and stir until they are moistened. Next, knead the dough on a lightly floured surface four to five times and roll it to about 1-inch thickness. Use a biscuit cutter on the dough and put the cuts on an ungreased baking sheet. Bake them for 12 to 14 minutes or until brown.
